 It is the stalk you eat not the root (just don’t eat the leaves, they are poison). But there are plenty of roots good in deserts. Carrot cake is my favourite (though beetroot can be used in pretty much any recipie carrot can). We grew up eating a stick of rhubarb with a poke of sugar to dip it in. Now my kids eat the same and love it.
